Kokyo White Fish tasting

Featured on this beautiful platter (my favourite course!) was hiramasa (kingfish), hamachi belly (yellowtail), kampachi ( en.wikipedia.org/wiki/Almaco_jack ), fluke (?), and flounder (? will update). My favourites were the hamachi belly cut, followed by the kampachi and then the hiramasa. SO loved the hiramasa the most. I love fatty, silky fish, so this tasting was amazing!! I discovered kampachi, and learned to appreciate the belly cut of the hamachi.
