1 c. bulgar
1 c. boiling water
1 lg tomato, seeded and diced
1 bunch parsley, minced
1 sm. cucumber, seeded and diced
1 bunch green onions, chopped
1 tsp. mint, dried
juice of 2 lg lemons
olive oil, to taste
salt & pepper, to taste
Soak the bulgar in the boiling water for an hour.
Prepare the vegetable ingredients. Add mint. Add cooled bulgar and toss. Add lemon juice and salt and pepper, stir. Add olive oil.
Refrigerate for a couple hours.
