Streusel Mango Macadamia Muffins

Recipe to follow:

 

1 1/2 cups sifted all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

Replacer for1 egg

3/4 cup raw sugar

1/3 cup vegetable margarine

1/4 cup soy creamer

3 teaspoon vanilla extract

2 mangos, diced

 

Streusel:

1/2 cup brown sugar

1/3 cup sifted cake flour

1/3 cup vegetable margarine, room temperature

1 teaspoon each cinnamon, nutmeg

¼ teaspoon cardamom

1 cup chopped macadamia nuts

 

Streusel: In small mixing bowl, combine topping ingredients. Blend with fork until crumbly. Set aside.

 

Sift 1 1/2 cups sifted flour with baking powder and salt into a bowl. In a medium bowl, beat together egg replacer, 3/4 cup sugar and 1/3 cup margarine. Add creamer and almond. Stir in flour mixture and mix well.

 

Pour batter into lined muffin pans- fill halfway, layer with some streusel.Cover with more batter. Sprinkle topping crumb mixture over batter.

 

Bake at 375° for 20 to 25 minutes. Cool.

 

Super warm
