Warm Hominy Cake
Recipe to follow.
1/2 cup canned hominy - pureed
1/2 teaspoon salt
3/4 cup nut milk
1/4 cup corn meal
1/2 cup all purpose flour
3 tablespoons sugar
3 tablespoons EVOO
Replacer for 2 eggs
3 teaspoons baking powder
1 cup soy cheeze, shredded
Combine all ingredients and fill muffin tins 3/4 full. Bake 350 degrees 30 minutes. Makes 12.
