Strawberry Blintz

Recipe to follow this weekend.

 

Batter

Egg Replacer for 4 eggs

1 1/4 cups soy milk

1 tablespoon plain soygurt

4 tbsp vegetable margarine

3/4 teaspoon vanilla

1 1/3 cup rice flour

1 tablespoon agave syrup

1 1/4 tablespoon baking powder

 

Puree all but vegetable margarine.

 

Filling

1 cup tofu ( or use Toffutti Cream Cheeze or my Tofu ricotta recipe)

Egg Replacer for 2 eggs

3 tbsp agave syrup

4 tbsp orange zest

2 tablespoons fresh orange juice

 

Puree and set aside.

 

Place crepe pan over medium heat- add margarine one tablespoon at a time and make crepes- set aside and add 2 tablespoon of filling and wrap up. Drizzle on fruit, carob sauce, soygurt, etc.

Makes 8-10 blintzes.
