Apricot Scones

EASY Recipe to follow.

 

2 ½ cups all-purpose flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

¼ cup chilled vegetable margarine, cut into small pieces

½ cup finely chopped dried apricots

¼ cup chopped pecans

½ cup oat milk

2 tbsp apple cider vinegar

Egg Replacer for 2 eggs

 

Extra margarine to “grease” cookie sheet

2 cups homemade apricot preserves

 

Mix the oat milk and vinegar together and allow to sit 5 minutes. Mix dry ingredients- cut in margarine. Add egg replacer and milk- mix well. “Grease” a cookie sheet with extra margarine- transfer the scone dough to the cookie sheet forming a round “pizza”. Dollop the preserves on top and bake at 375 degrees 25 minutes or until golden brown. Cool and then slice.
