Twice Baked Potatoes

Main Course....this is what I call comfort food!

 

Bake a couple of potatoes...remove the potato "meat" and whip with a little salt, pepper, vegetable margarine, almond milk, lemon juice, Rice Parmesan and grated soy cheeze.

Stuff the skins and return to the oven 15 minutes at 375 degrees.
