Asian Carrots and Baby Corn

Yummy - recipe coming!

 

Make a sauce- puree in blender-

2 tomatoes

1/4 red onion

2 carrots

Juice of 1 lemon

1/4 cup rice vinegar

1/4 cup EVOO

2 tsp tamari

2 cloves garlic

3 tsp freshly grated ginger

Salt to taste

 

Cut up 3 cups carrots - steam until ala dente

1 1/2 cups baby corn

 

Add enough sauce and heat throughly.

 

Feeds 4

Leftover sauce makes a great salad dressing.
