Cran-Orange Scone
These went way too fast.
Recipe to follow:
2/3 cup plain soygurt
Egg Replacer for 1 egg
3 cup cake flour
4 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup vegetable margarine
1 cup fresh cranberries or dried cranberries
1/2 cup raw sugar
3 tsp grated orange peel
Heat oven to 375 degrees. Whisk soygart and egg replacer, add flour, baking powder, soda and salt. Mix in in margarine with a pastry blender untll mixture is crumbly.
Add cranberries, sugar, and orange peel - combine.
Turn out dough onto a lightly floured board and give 5 to 6 kneads, just until well mixed. Form dough into a ball, cut into 8 wedges. Form each wedge into a ball and place on an ungreased cookie sheet.
Bake 20 to 25 minutes or until medium brown. Remove to wire rack. Brush with a little margarine and sprinkle with sugar. Let cool, uncovered, at least 1 hour before serving.
