Blackberries & Kreme with Gingered Lemon Scone
Be still my stomach! Warm out of the oven....crumbly delish!
Recipe to follow:
1 1/2 cup flour
3 tablespoons sugar
1 1/2 teaspoons grated lemon peel (1 lemon)
1 tsp grated ginger
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons vegetable margarine
8 tsp soy creamer
3 tbsp lemon juice
Mix flour, 3 tablespoons sugar, lemon peel, baking powder, baking soda and salt in processor. Add margarine, cutting in with on/off turns until mixture resembles coarse meal. Put mixture into bowl. Add 8 tablespoons creamer and lemon juice, blend until soft moist dough forms. Drop dough by 1/4 cupsful onto heavy baking sheet or smooth out into 1 layer on the cookie sheet. Sprinkle with 2 tablespoons raw sugar. Bake until golden, about 30 minutes.
If baked as 1 layer, cut into slices, dollop with nut kreme and black berries.
Serves 8.
