Champagne Grape Bruchetta

1 cup vegetarian crab or shrimp, diced

1/2 cup champagne grapes

1/2 cup vegan mayonaise

2 tbsp lime juice

Salt and pepper to taste

2 tsp chopped chives

1 baguette, sliced

EVOO

 

Mix all ingredients together except for bread and EVOO.

Pour a little olive oil on the baguette and bake at 350 degrees 6 minutes until toasty- place a tablespoon of salad on slice and garnish with a lime slice and more chopped chives.

Feeds 12 as appetizer.
