Cilantro Pesto Mostaccioli with Veggies

Make your pasta. Drain.

 

Heat olive oil and add 1/2 sliced onion, 1 sliced red pepper,2 cut up artichokes,1/4 cup sliced olives, 1/2 cup sliced mushrooms - saute.

 

In a blender add 2 cups spinach, 1 cup cilantro, 1/2 cup rice parmesan, 4 cloves garlic and pulse until fine adding a little olive oil at a time. Season with salt and pepper. Add to veggies and heat. Pour over pasta, stir together, sprinkle with chives and serve.

 

4-6 servings.
