Dill Potato and Green Bean Salad

Recipe to follow.

Here it is:

3 Large Russets ( cook and peel your favorites- red potatoes work best with the vinaigrette, I just did not want to go to the market)

1 bunch minced scallions

1/4 red onion, sliced into rings

1/4 cup dill pickles

2 tbsp fresh dill

1/4 cup minced parsley

1 cups parboiled fresh green beans

1/2 cup celery, minced

3 cloves garlic, minced

 

Combine ingredients and then mix with the following vinaigrette:

 

1/2 cup tarragon vinegar

1/2 cup olive oil

2 tsp minced taragon

1 clovegarlic, minced

1 tsp onion salt

1 tsp raw sugar

1 tsp black pepper

2 tsp minced bell pepper

1 tsp celery salt

 

Whisk together and pour over.

Serves 6-8
