Pita Paneer Sandwich
Anyone for handmade soycheese?
Recipe to follow.
15 ounces extra firm tofu
¼ cup soy milk powder
1 tablespoons grapeseed oil
½ tsp sea salt
1/3 cup tamari
1/3 cup cider apple vinegar
1/3 cup tahini
1/3 cup agave syrup
1. Remove tofu from packages and drain. Cut the block into thirds. Boil in water ten minutes. Drain it well for ten minutes (use a colander, clean cloth, or paper towel). Then put it in a large bowl. Mash the tofu until it has an even texture that is close to the texture of cottage cheese. Do not leave lumps too large or to mash too finely.
2. Combine the rest of the ingredients and process together. Add this mixture to the tofu. Stir well. Refrigerate a cookie sheet until very cold- I lined it with wax paper- pour the “paneer cheeze” out onto the sheet and spread evenly. Refrigerate overnight until thoroughly chilled.
3. Cut and serve or use as you would cheese.
Makes about 6 cups
Once you get the recipe under your belt, experiment – add caraway seed, jalapeno, etc. Yum!
