Pecan Praline Biscotti

First off, make your pralines...
2 cups brown sugar, firmly packed
1/4 cup water
1/4 cup soy creamer
2 cups pecan pieces and halves
2 teaspoons vanilla
3 tablespoons chilled vegetable margarine, cut in pieces
Combine sugar, creamer, and water in a 2-quart saucepan; heat to boiling stirring constantly. Cook until mixture reaches soft ball consistency (235°).Remove from heat; stir in pecans, vanilla, and margarine. Immediately drop by tablespoons onto wax paper.
On to the main feature:
1 cup vegetable margarine
Egg Replacer for 5 eggs
2 tsp. baking powder
1 3/4 c. raw sugar
1 tsp. salt
6 c. flour
2 vanilla beans, scraped
1 cup praline bits
Cream margarine and sugar. Add egg replacer. Mix in rest of ingredients- at the end fold in the pralines.
Make a loaf roll 9 inch long. Bake 20 to 25 minutes at 350 degrees. Cut into strips, leave in oven over night, then dip in melted chocolate and allow to dry on waxed paper.
