Blueberry Stuffed Swedish Pancake

You can make these silver dollar size or stuff them "omlette-style" your choice.
Whisk together:
2 1/2 c. soymilk milk
2 cup flour
1 tsp. salt
1 tsp baking powder
2 tbsp. sugar
2 tbsp. vegetable oil
Fry in skillet 3 minutes- fill with favorite fruit and turn over, folding the pancake over the fruit. Fry another 3 minutes and serve.
This will make 4 large cakes or 10 plus average size.
