Baked Mushroom Stroganoff Spud with Squash

What the heck, I believe in leftovers....Tom had this instead.

(He was not in a "pastry mood")

Recipe to follow.

 

I baked the potato with the squash 45 minutes at 400 degrees- basted with vegetable margarine.

Mixed 3 tbsp Tofutti with 1/2 cup leftover Shiitake mushroom sauce (See East meets West Pasta post) and stuffed the potato then baked an addtional 9 minutes.
