Lemon Bar Blueberry Cupcakes
Recipe to follow
1 1/2 cups all-purpose flour
3/4 cup raw sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
Egg replacer for 1 egg
1/3 cup soy milk
1 cup fresh blueberries
1/4 cup margarine
Mix all ingredients together and pour into cuppie liners 1/2 full- bake at 375 degrees 12 minutes.
Whisk together -
1/3 flour
1 cup lemon juice
1/2 cup raw sugar
2 tbsp agar agar powder
Pour over crust and bake 12 minutes longer until set. Cool. Refrigerate.
Top with powdered sugar.
