Saffron Dolmas & Tahini

Follow the recipe in the New Vegan except:

 

Add 4 threads saffron to 3 cups rice

Pulse:

4 mushroom seitan "sausage"(previous photo)

1 cup grape tomatoes

1/2 cup pine nuts

2 tbsp garlic

1 cup parsley

1 medium leek, sliced

Combine all- sautee with olive oil. Mix with rice and stuff, roll grapeleaves- place in steamer, sprinkle with oil and steam 30 minutes on low flame with lid on- no peeking!

Makes 80-90 dolmas.
