Bella Vegsaugage & Kale Pasta

    6 cloves garlic, finely sliced
    1/2 large spanish onion, finely sliced
    1 cup mushrooms, sliced
    2-3 good pinches dried red pepper flakes
    1 sprig rosemary or oregano
    1/2 head kale roughly chopped
    4 links Veggie sausage
    3-4 ripe, medium tomatoes, cubed with seeds
    1/4 cup dry white wine
    4tbsp extra virgin olive oil
    1/2lb favorite pasta
    4tbsp grated veggie parmesan
    Salt and black pepper to taste
    In a skillet sauté the sausage and onion, and mushroom in some olive oil. Add red pepper and rosemary. When onions are translucent, add garlic and kale- continue to sauté 2 minutes longer. Add tomatoes and reduce with wine. Simmer 10 minutes.
    Make the pasta. Mix together and dot with a little olive oil and veggie parmesan.
