Mangosteen Squared Cupcake

An adaptation from VCTOTW-

 

1 cup soy milk

1 tsp. apple cider vinegar

1 3/4 cups all-purpose flour

2 Tbsp arrowroot

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup vegetable margarine softened

1/2 cup agave syrup

2 tsp. vanilla extract

1/2 cup mangosteen juice

 

Combine all ingredients- dry to dry and thewet a little at a time.

Pour into cupcake liners 1/2 full and bake at 350 degrees ten minutes-

 

1 Mangosteen, seeded and pulp scooped- Half way into baking, add a scoop of fruit (use a melon baller). Finish baking and cool.

 

Frosting:

 

2 # powdered sugar

1/2 cup vegetable shortening

1/2 cup vegetable margarine

1 tsp vanilla

1/2 cup mangosteen juice

 

Cream together. Ice cuppies.

Decorate with dried mangosteen and colored sugar or sprinkles.

Yields 20 cuppies
