Sweet Masa Cupcake with Soyrella Pimento Spread

I used my corn bread recipe as posted but increaded the flour 1/2 cup and added fresh corn sliced off the cob, fresh oregano and pureed the entire batter - these came out very moist!

Bake at 350 degrees 25 minutes and "ice":

 

1 cup Soyrella, shredded

8 ounces Tofutti cream cheeze

4 tbsp minced pimentos

1 tbsp soy cream

Combine cream, cheeze, and pimentos. Fold in Soyrella and shread on cuppies.

Garnish with oregano.

These are great warm or room temperature!
