THE Spelt Chews
Recipe:
1/4 cups oat bran
1 cup oatmeal
2 tbsp flax seed, ground
1 1/4 cups spelt flour
1 teaspoon baking soda
1 teaspoon salt
3 tbsp Smart Balance
1 1/2 cups brown rice syrup
2 teaspoons vanilla extract
1/8 cup minced dates
2 tbsp dried apricots
2 tbsp dried pineapple
1/8 cup raisins
2 tbsp dried cranberries
2 tbsp dried papaya
Juice of 1 orange
1 tsp cinnamon
1/2 cup chopped walnuts
Preheat oven to 375 degrees.
Pulse all ingredients and then mix well, leaving some walnuts to sprinkle on top of cookies.
Drop by tbsp to cookie sheet and press a bit.
Bake 15-17 minutes.
