Sweet Verde Mole

Pumpkin seeds, sesame and pine nuts....Holy Mole!

Mole Verde (Regular)

 

1/2 small onion

2 garlic cloves, peeled

1/4 teaspoon coriander seed

1/4 teaspoon anise seed

½ cup pepitas (pumpkin seeds)

3/4 teaspoon dried chili pepper flakes

3/4 teaspoon black peppercorns

2 whole cloves

¼ cup sesame seed, toasted

2 tablespoons sesame seeds, toasted

1 stick cinnamon

½ cup EVOO, divided

2 corn tortilla (let air dry while assembling ingredients)

1/4 ripe plantain, sliced

¼ cup pine nuts

1 leaf fresh thyme

1 sprig Italian parsley

1 tsp salt

6 oz mexican chocolate, chopped

1 cup agave syrup

  

In oil, saute the onion, garlic, and herbs. Add the nuts, seeds, as well as rest of the ingredients with the remaining oil a little at a time (except for plantain, tortilla, chocolate and agave) and allow to toast. Cool. Grind into a paste or use a processor. Process the plantain, tortilla, chocolate and agave- mix into the paste.

 

At this point you may add vegetable broth to the paste and make a sauce to serve over tofu, seitan, or tempeh. Heck, I also use it as a marinade.

  

Sweet Mole Verde:

 

Follow the above recipe, omit the onion, garlic, and coriander. Use a whole plantain- if you wish it sweeter, add a little more agave.
