[22/365] Ginger-Orange Beef with Rice Noodles
I got this recipe from "Classic Main Courses," a cute cookbook I got from Goodwill for $1.99.
Ingredients:
1 lb beef, cut into thin strips (I just used "beef stew meat")
Juice and zest of 1 orange
1 tsp soy sauce (I use Bragg's)
1 tsp cornstarch
1 tbsp ground ginger (or a 1-inch piece of fresh ginger, finely chopped)
2 tsp sesame oil
1 large carrot, cut into thin strips (a mandoline works best)
2 green onions, thinly sliced
Directions:
Marinate beef in OJ and zest for 30 mins.
Pour off and set aside lilquid from the meat; stir soy sauce, cornstarch, and ginger into the meat.
Stir-fry the beef in the sesame oil for a couple minutes; add carrot and fry for a couple more minutes; add green onions and reserve liquid and cook until reduced.
Serve with rice or rice noodles and spicy rooster sauce.
