sukjunamul, soybean sprout side dish with cucumber

I was not expecting to like this as much as I did. I thought it might be a little too salty or plain, but right now it's my favorite of Maangchi's vegetarian side dishes! The sprouts are crispy and slightly sweet, and the cucumber adds another crunch and a freshness. I didn't have the red pepper threads I believe Maangchi used as a garnish so I sprinkled a few red pepper flakes instead. They don't show up well, but it does add some interest. Delicious!
