The shiny purple asian eggplants at the Farmer's Market were so enticing that I bought a few even though I had no idea what to do with them. Searching through the cookbooks lead to a huge, delicious pot of ratatouille that we ate for days.

They do indeed look delicious, in turkish cuisine eggplant is the number one veggie, though I've never seen a red one before. The long ones would be good for stuffing (with meat or rice), the fat ones for broiling, both can be cubed and used in stews or rata.
