Chef Linda Shiue, MD hosts the Thrive Kitchen at Kaiser Permanente Mission Bay, this time with a low(er) carbohydrate option or two.

 

Continuous glucose monitoring showed a rise in blood glucose following ingestion of the salad and spring rolls, probably due to the mango and starchy vegetable content, with a drop following exercise (possibly due to a sustained insulin response in an insulin sensitive, non-diabetic physician/human)
