Figgy Figgy

Yeah, I'm still in a post-headcold goofy mood. I really wasn't in to the whole phyllo thing, so I stuffed leaves with a fig mixture, made a semi freddo and crystallized some ginger, then served it up with blackberries (which I forgot to put on the plate when I took this picture).

 

For some weird reason known only to herself, our co-instructor decided to demand the "name of the dessert" written in tempered chocolate on the plate. It threw me off and made my plate vaguely declasse (she says she loves it when the name of the dessert is written on the plate and it's sooooo elegant. I think it's tacky and assume she's just making us do it because she's a control freak and think the extra practice will do us plenty good for future efforts. Whatever). Anyway, my view is that desserts are not boxes of cereal and if you can't remember what you ordered by the time it gets to you, you've got serious problems. But she's Chef Instructor and I'm Lowly Student and I can only do what she demands. Good practice for "The Real BOH".

 

Plus chocolate and fig makes me want to gag. Maybe that's my main complaint

 

AND Heidi dared me to write "figgy figgy" on the plate and I can't resist a dare when it's that goofy (we had to "name" our dessert and I named mine "Figgy Figgy Figgy Fig" because I thought the whole concept of "name of dessert" was stupid. I originally named it "Ernesto" but that seemed a little plain on the plate.)
