Poached Tilapia with Vegetables in White Wine Sauce
This can either be done in a baking dish or in individual foil packets.
1. Create layer of herbage at bottom - I used thyme and parsley.
2. Create layer of fish - I used Tilapia filets, but other light white fish would work just as well, as would chicken or pork
3. Create layer of veggies (optional) - I used cherry tomatoes, yellow squash and zucchini
4. Add olive oil, lemon juice, and just enough white wine to keep it moist - I used Rhapsody, which is a lightly sweet German-style wine
5. 450 for about 20 minutes or until the fish is opaque
6. YUM.
