FRITATTA, OLE!!!!

We had some veggies and things to use up, a fritatta was Caryn's idea. It's like a quiche, but with tasty fried potatoes instead of nasty pie crust.

 

Unfortunately for her, it was my execution and therefore infused with bacony goodness. Yes, it seems cruel to make bacon things your vegetarian wife can't eat but trust me, she makes just as many if not more bacon-free dishes that I can't eat without vomiting in horror.

1. Cook up lots of bacon, remove bacon pieces and saute onions, spinach, garlic, jalapenos, mushrooms, whatever else sounds good (hmmmm asparagus comes to mind) in the bacon juice (i.e. FAT)

2. Remove baconated veggies, line pan with thinly sliced potatoes

3. Spread sauteed veg on potatoes, pour in enough eggs, beaten, to cover (I used 6 for a 12" pan)

4. Cook at low heat in oven or on stovetop until eggs are firmish and potatoes are cooked through (about 20 mins)

5. Throw some melty cheese on there - I used some shredded sharp cheddar left from taco night
