Kabuto - Dinner

Foie gras sushi: Seared marinated goose liver served with balsamic raspberry sauce...This was interesting; I would've never thought to use foie gras in nigiri. The sushi rice was a bit too strong for the foie gras...I'm used to eating foie gras with something much more mild, like a cracker
