The pea problem

We had bought some fresh peas (a seasonal treat) at the farmer's market and I wanted to serve them uncooked for the most flavour excitement. The only other vegetable left in the fridge was two bell peppers. I placed them on my cutting board and stared at them for some time having little idea how I could make a salad out of peppers and peas without lettuce or greens.

 

Then couscous hit me!

 

I cooked the couscous in chicken stock, chilled it and added the diced peppers and the peas. Dressed it all with a lemon, olive oil dressing, a touch of garlic and seasoned with our friends salt and pepper.
