Beijing Day 2
丁丁炒麵 (dīngdīng chǎomiàn), as served up at the 天山派食府. Address: 北京市東城區東直門春秀路七號, tel: 64168831.
It is a Uighur restaurant suggested by Brendan. The lamb kabobs 羊肉串 were first rate, but the dish above is my favorite of all. When I visited Xinjiang, I ate it daily and never came close to tiring of it. The true inspiration for spaghetti (don't let the Han tell you otherwise), it contains all the classic ingredients: tomatoes, garlic, onions, bell pepper, etc.
The only differences are it contains lamb instead of pork or chicken and they also add vinegar. No matter, this is simply superb. This restaurant also offers a meatless version.
