Kalasin Chicken Dinner - Danoi makes the gravy
While I was in Kalasin, my host Jessada's friend and neighbor Ole slaughtered one of his chickens to make a special dinner for me. Ole and Danoi cooked the dinner, with the help of Lek and Soon, and we ate it inside Ole's house, as it was raining outside.
The dinner can basically be described as a whole chicken, pieced, cooked in a sealed pot, with spices, over a bed of lemongrass. Inside the pot, atop the chicken was a cake made of the chicken's congealed blood, which after cooking in the pot, became the base for an amazingly spicy and rich gravy.
