Experiments in chocolate muffins #1
There are a lot of recipes of dough for muffins over the internet, but I couldn't find the one, wich can rise so much, that the muffin looks like "nuclear cloud". After a lot of attempts trying different recipes, I couldn't make the muffins look like I wanted to, nevertheless I have found the recipe that I simply like very much.
Ingredients:
6-8 tablespoons of flour
2 tablespoons of cacao
1 teaspoon of vanilin
4/3 teaspoons of baking powder
1/2 teaspoons of soda
150 g. of sugar
2 eggs
6 teaspoons of sunflower oil
100 ml. of milk
1 plate (150g.) of dark chocolate
200 g. of dried cherries or bilberries
Recipe:
Mix all dry ingredients (with 6 tablespoons of flour). Warm up the milk, dark chocolate and sunflower oil blending untill the chocolate melt completely. Cool derived liquid mix (to not let the eggs turn), add 2 eggs, blend untill the mix became homogeneous.
Blend derived dry and liquid mixes untill the dough became homogeneous. The dough must be fluid but not too much, add 1 or 2 tablespoons of flour to correct its consistence.
Add dried berries and fill the muffins form with the dough and bake 180°C in the oven for about 20-25 minutes. I think the best muffins are a little bit wet inside, so don't bake it too long, if don't agree with me bake 200°C :)
