A beet-based stir fry
Very random but this turned out well! I wanted to use the beets I had, so I cooked up some brown rice; meanwhile I chopped up the beets, plus some onion, carrots and baked tofu. Stir-fried up those four, poured them over the rice, sprinkled some salt and what Avanti calls their 'kick-ass' seed blend over the top. Filling and delicious.
