Vegetable minestrone...and extra!
I wanted to use up a bunch of fresh vegetables before it got too late, and the advantage of a good amount of soup is that you can have some now and store the rest for later. Everything in the plastic containers is now happily frozen for future use while the contents of the bowl made for an excellent dinner last night.
