Now that the fillo is out and cut, we have only a limited time to get to work
I cut the fillo into 2 strips of about 2.5-3 inches across. The second roll of fillo (next to the box behind the vriki/briki with the pastry brush) was cut into smaller strips for the baklava triangles.
