Maple Pecan Tarts

Maple Pecan Tarts (makes 12 big tarts)

 

You will need:

 

1 jumbo muffin tin (each top 3 3/4" across)

Pie pastry (amount that would make 3 9" pie shells)

3/4 cup pure maple syrup

3/4 cup packed brown sugar

1/2 cup corn syrup

1/4 cup unsalted butter, softened

3 large eggs

1/4 tsp salt

pecan halves

 

Preheat oven to 350F; middle rack

 

Roll out pie pastry and put into muffin tins. Make the rims a bit higher as the pastry will shrink as it cooks. Put pecan halves into the shells, about 5-6 in each

 

Whisk together syrup, sugar and maple syrup, add beaten eggs. Whisk in butter and sat, and vanilla extract.

 

Put about 3 tbsp. of filling into each shell. Bake for about 35 minutes, check to make sure the pecans are not burning.

 

Cool for about 5 minutes, then carefully remove.

 

Eat
