Make Ahead Mashed Potatoes

 

Serves: 10-12

Preparation: 30 min.

Bake: 350 ~ 45 min.

 

5 pounds pared potatoes, about 10 medium

6 ounces cream cheese

1 cup sour cream

4 ounces grated sharp Cheddar cheese

1/2 cup grated Parmesan

4 green onions with tops, chopped

1 tablespoon salt

1 teaspoon pepper

 

Cook potatoes, mash. Add remaining ingredients and beat well. Turn into 3-quart greased casserole. Cover and store in refrigerator up to 2 weeks. Remove from refrigerator 1 hour before baking. Fluff up potatoes with little milk, if necessary. Bake uncovered for 45 minutes.
