Cooked some cherry tomatoes with shallots and garlic in olive oil until soft, and in a separate pan, sauteed some pancetta (Italian bacon - excess fat was removed after cooking it to leave just enough oil for cooking the spinach) and spinach, which was tossed with al dente pasta.
