Stuffed bell peppers have always been one of those tricky dishes to incorporate flavor into. The meat and bell peppers are usually either too bland or you end up with a huge lump of meat incased in a bell pepper. This Healthy Recipes is a version of the classic stuffed bell pepper that incorporates the sweet flavors of the red bell pepper with a tender meatball-like filling and quinoa.




1 lb ground beef

3 slices of sourdough bread (blended) OR 1 cup breadcrumbs

4 cloves garlic, finely chopped

½ yellow onion, finely chopped

1 egg

½ tsp Kosher salt

½ tsp ground black pepper

½ tsp paprika

2 Tbsp Italian seasoning (dried oregano, basil, etc.)

4 red bell peppers

1 16 oz can tomato sauce

1 6 oz can tomato paste

2 cups cooked quinoa

¼ cup balsamic vinegar

¼ cup olive oil

½ cup freshly grated parmesan

½ cup Italian vinaigrette (either homemade or store bought is okay)
