green sauce

in our region we have a food called "Frankfurter Grüne Soße" (frankfurt's green sauce). My mom/family likes it a bit different than the normal sauce.

 

you need (to feed four people):

cress (a little container full (2x4 inches))

a bunch of parsley, chives, dill, salad burnet, sorrel, borage

pound curd (i

pound nature yoghurt

tablespoon mayonnaise

cube/tablespoon/depends what you have vegetable stock in just enough water to disolve

at least 10 cooked eggs

potatoes

 

chop the herbs in your mixer (you can do this by hand of corse, but it tastes better when the herbs are finer) and put together with the curd, yoghurt and mayonnaise and vegetable stock. if you don't like the consistence put in some milk/cream to smooth it or a bit curd to make it thicker...

peel the eggs and cut to slices put it to the herb-curd-mix.

don't forget to cook the potatoes and you have a delicious and easy meal.

 

this is our version of the green sauce. the real frankfurter sauce adds a bit lemon juice instead of mayonnaise and you'll get the eggs extra.
