Lunch - Tomato and Avocado Salad
Just something I threw together on an empty stomach and an empty fridge.
Serves 2
1 med or large avocado (diced in cubes)
15-20 grape tomatoes (sliced in half)
1 1/2 oz. cheese (pearl mozzarella, jack, brie or feta are fine)
1 Tbs extra virgin olive oil
1 Tbs of balsamic vinegar
Red onion (sliced to your taste or liking)
Dash of fresh ground pepper
Sprinkle of kosher salt
