Satay Chicken with Grilled Corn and Roasted Sweet Potato Leftover Salad

Salad made with leftovers from dinner with Julia'a mum and grandma. This is a better photo of all the food

 

I diced the roasted purple sweet potato and removed the corn kernels and tossed it with some diced celery from some freshness and bound it together with balsamic vinegar and extra virgin olive oil. Quite refreshing!
