Stewed Pork Leg is a dish that many travellers to Thailand rave about! I Spicy makes a pretty good version with silky gelatinous pork skin encasing tender fall-apart pork. There's also a generous layer of melting fat under the skin if you're into that sort of thing :)
The sweet soy sauce it was stewed in might not be everyone's cup of tea, but that is how it is in Thailand. A small dish of garlicky lime, chilli and fish sauce helps temper the sweetness.
