Lamb Shoulder - tall - Annie Smithers Bistrot AUD30

Lamb Shoulder slow cooked with herbs, served with garlic potato mash and cucumber, mint and yoghurt salad

Moist and tender meat that disintegrates into shreds of rich lamb bliss! Shoulder meat seems to be very popular nowadays. It's cheap and very tasty with gelatinous seams of tendon that keeps the flesh moist.

The cucumber, mint and yoghurt salad even impressed a mint-avoider like Julia, although we both thought that the hot lamb and cold salad would have been better served separately. The combination helped lighten this dish for Summer, but dtracted a bit from the lamb. The similarity to a lamb gyros is unmistakable.
