I can't remember exactly what these yummy morsels were, but, here goes.
There was a slab of duck liver parfait that was as smooth as silk! The rich gamey flavour of duck was slightly balanced by the zesty orange.
Next, we have a tile of pheasant pate with a brandy jelly on top.
The pale disc of chicken with was slightly smoky with a dob of pesto on top.
The rustic misshappen terrine of pork and pistacchio was full of flavoursome pork. A small pile of chunky quince jam provided a nice sweet counterpoint to the savoury pork.
What looks like slivers of spam in between pickles was actually as smoky ham salad. Not bad, but the crunchy pickles was a bit out of place amongst the smooth mellow flavours.
Lastly, we had a slice of sausage sitting on a pile of puy lentils, a classic combination.
The nashi and chive salad in the centre cleaned the palate nicely for our mains. It was fun having a wafer of crispy pancetta too :)
