Tambusan Ulam Pasih - Oven baked fish fillets in delicate lemon and spice sauce.

 

Oven-baked fish and pan-fried fish with a sauce seemed a bit too Westernised to be authentic Balinese food, but we felt we needed some seafood to keep the meal on the light side.

 

As it turns out, this oven baked fish would probably have been baked in banana leaves over hot coals in Bali. The tender fillets of fish, turmeric, galangal, lemongrass were kept moist in it's pouch of aluminium foil with a square of banana leaf at the bottom to impart the mild grassy flavour and a couple of Kaffir lime leaves for some freshness.
